Ingredients
- 8 ounces pasta of your choice
- 1 cup cooked smoked beef, chopped
- 1 cup cherry tomatoes, halved
- 1 cup corn, drained
- 1 cup black beans, rinsed and drained
- 1 cup shredded cheese
- 1/2 cup diced bell pepper
- 1/4 cup chopped green onions
- 1/4 cup taco seasoning
- 1/2 cup grape juice
- 1/4 cup vegetable oil
- Salt to taste
Instructions
- Cook pasta until al dente, drain and rinse under cold water.
- In a large bowl combine pasta, smoked beef, tomatoes, corn, black beans, cheese, bell pepper, and green onions.
- Whisk together taco seasoning, grape juice, vegetable oil, and salt.
- Pour dressing over salad and toss to coat.
- Chill for at least 30 minutes before serving.
Notes
- For extra heat, add sliced jalapeños to the salad. The dish can be made a day ahead
