Ingredients
- 8 oz bow tie pasta
- 1 cup corn
- drained
- 1 cup cherry tomatoes
- halved
- 1 can black beans
- rinsed and drained
- 1/2 cup beef pepperoni
- sliced
- 1/2 cup shredded cheese
- 1/4 cup fresh cilantro
- chopped
- 1/4 cup olive oil
- 1/4 cup lime juice
- 1 tsp cumin
- 1 tsp chili powder
- 1 cup salsa
Instructions
- Cook the bow tie pasta until al dente, drain and rinse under cold water.
- Whisk together olive oil, lime juice, cumin, and chili powder to make the dressing.
- In a large bowl combine pasta, corn, cherry tomatoes, black beans, beef pepperoni, cheese, and cilantro.
- Pour dressing over the mixture, add salsa, and toss to coat.
- Refrigerate for at least 30 minutes before serving.
Notes
- For extra heat
- add diced jalapeño to the dressing. Substitute smoked beef strips for the pepperoni if preferred. The salad can be made a day ahead for deeper flavor.
