  • 2 medium sweet potatoes, peeled and diced
  • 1 lb lean ground turkey
  • 1 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 tsp cumin

  • ½ tsp black pepper
  • Salt, to taste
  • 1 cup diced tomatoes
  • 1 cup shredded mozzarella or cheddar cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss diced sweet potatoes with half the olive oil and a pinch of salt. Spread on a baking sheet and roast 20–25 minutes until tender.
  3. While potatoes roast, heat remaining olive oil in a skillet over medium heat.
  4. Add onion and cook 3–4 minutes until softened.
  5. Stir in garlic and cook 30 seconds.
  6. Add ground turkey and cook until browned.
  7. Mix in paprika, cumin, chili powder, salt, pepper, and diced tomatoes. Simmer 5 minutes.
  8. Transfer roasted sweet potatoes to a baking dish and top with turkey mixture.
