Ingredients
- 2 lbs boneless skinless chicken thighs or breasts
- 1 cup pineapple chunks (with juice)

- 1 tbsp rice vinegar
- 1 tbsp fresh ginger, grated

Instructions
- Place chicken in the bottom of the crockpot.
- In a bowl, whisk pineapple (with juice), soy sauce, honey, ketchup, rice vinegar, ginger, garlic, and pepper.
- Pour sauce over the chicken and stir gently to coat.
- Cover and cook on low for 5–6 hours or high for 3–4 hours, until chicken is tender.
- For a thicker sauce, remove chicken and whisk cornstarch slurry into the crockpot. Cook on high for 10 minutes until thickened.
- Return chicken to the sauce and coat well.
- Serve warm, garnished with green onions.
