  • 1 cup pineapple chunks (with juice)

  • 1 tbsp fresh ginger, grated

Instructions

  1. Place chicken in the bottom of the crockpot.
  2. In a bowl, whisk pineapple (with juice), soy sauce, honey, ketchup, rice vinegar, ginger, garlic, and pepper.
  3. Pour sauce over the chicken and stir gently to coat.
  4. Cover and cook on low for 5–6 hours or high for 3–4 hours, until chicken is tender.
  5. For a thicker sauce, remove chicken and whisk cornstarch slurry into the crockpot. Cook on high for 10 minutes until thickened.
  6. Return chicken to the sauce and coat well.
  7. Serve warm, garnished with green onions.
