Instructions

- Add egg and vanilla extract and mix until combined.
- Stir in flour, baking powder, and salt until a soft dough forms.
- In a separate bowl, mix crushed cookies, freeze-dried strawberries, and melted butter.
- Scoop dough into balls and roll the tops in the strawberry crunch mixture.
- Place cookies on the baking sheet, gently flattening slightly.
- Bake for 10–12 minutes until edges are set and centers are soft.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
