  • 1 lb raw shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 4 cups seafood broth (or chicken broth)
  • 1 can (14 oz) diced tomatoes
  • 1 tsp paprika
  • ½ tsp chili flakes (adjust to taste)
  • ½ tsp ground cumin
  • ½ tsp black pepper
  • Salt, to taste
  • Juice of 1 lime
  • Fresh cilantro, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and bell pepper and sauté for 4–5 minutes until softened.
  2. Add garlic and cook for 30 seconds until fragrant.
  3. Stir in diced tomatoes, broth, paprika, chili flakes, cumin, pepper, and salt. Bring to a simmer.
  4. Reduce heat and simmer for 10 minutes to let flavors develop.
  5. Add shrimp and cook for 3–4 minutes, or until shrimp turn pink and opaque.
  6. Stir in lime juice and adjust seasoning as needed.
  7. Remove from heat and garnish with fresh cilantro.
  8. Serve hot and enjoy immediately.
