  • 1 cup uncooked long-grain rice, rinsed
  • 2 1/4 cups chicken broth
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp fresh lemon zest
  • 1/4 cup fresh lemon juice
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp black pepper

Instructions

  1. Lightly grease the slow cooker insert.
  2. Add rinsed rice to the bottom of the slow cooker.
  3. Place chicken on top of the rice.
  4. In a bowl, whisk chicken broth, olive oil, garlic, lemon zest, lemon juice, oregano, thyme, pepper, and salt.
  5. Pour the mixture evenly over the chicken and rice.
  6. Cover and cook on low for 4–5 hours, until chicken is tender and rice is cooked.
  7. Shred chicken slightly or leave whole, then gently stir to combine.
  8. Stir in peas if using and cook 5 more minutes.
  9. Garnish with fresh parsley and serve warm.
