- 2 boneless skinless chicken breasts
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 can (15 oz) crushed tomatoes
- 1 small onion, diced
- 3 cloves garlic, minced
- 3 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- ½ tsp paprika
- ½ tsp black pepper
- Salt, to taste
- Juice of 1 lime
- Optional toppings: tortilla strips, shredded cheese, avocado, cilantro, sour cream
Instructions
- Add chicken, beans, corn, tomatoes, onion, garlic, broth, and seasonings to the slow cooker.
- Stir gently to combine.
- Cover and cook on low for 6–7 hours or high for 3–4 hours.
- Remove chicken, shred with two forks, and return to the slow cooker.
- Stir in fresh lime juice and adjust seasoning if needed.
- Serve hot with your favorite toppings.
