- 3 cups baby potatoes, halved
- 2 cups fresh green beans, trimmed
- 3 tbsp olive oil
- 3 cloves garlic, minced

- 1 tsp dried oregano

- Juice of ½ lemon
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a large bowl, toss potatoes with 2 tablespoons olive oil, half of the garlic, paprika, oregano, salt, and pepper. Spread them evenly on the baking sheet and roast for 20 minutes.
- While potatoes bake, toss green beans with remaining olive oil and garlic.
- After 20 minutes, remove the baking sheet and add the green beans. Mix everything gently.
- Return to the oven and roast for another 15–20 minutes, until potatoes are crispy and golden and green beans are tender.
- Remove from oven, drizzle with lemon juice, and sprinkle with fresh parsley before serving.

- For extra crispiness, increase oven temperature to 425°F (220°C) for the last 5 minutes.
