- ½ cup red bell pepper, diced
- ½ cup frozen peas
- ¼ cup green onions, sliced
- 3 tbsp gluten-free soy sauce or tamari
- ½ tsp ground ginger
- ¼ tsp black pepper
- Salt, to taste

Instructions
- Heat sesame oil and olive oil in a large skillet or wok over medium-high heat.
- Add onion and cook for 2–3 minutes until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add pineapple, bell pepper, and peas and cook for 2–3 minutes.

- Pour in soy sauce, ginger, pepper, and salt. Stir well to combine.
- Cook for 5–7 minutes, stirring occasionally, until rice is heated through and lightly crisp.

Notes
- Use day-old rice for best texture; if using fresh rice, spread on a tray to cool and dry a bit.

- For a stronger glaze, whisk a tiny splash of lime juice with the soy sauce.
- Skip nuts if allergies or serve on the side for a nut-free version.
