  • 1 large egg
  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 cup brown sugar, packed
  • 1 tsp ground cinnamon
  • 3/4 cup granulated sugar
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup butter, softened

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add egg and vanilla extract; mix well.
  4. Whisk flour, baking soda, cinnamon, and salt; gradually add to wet ingredients.
  5. Gently fold in diced peaches.
  6. Drop spoonfuls onto sheet, spacing apart.
  7. Bake 12‑15 minutes until edges are golden.
  8. Cool on sheet 3‑4 minutes then transfer to rack.

Notes

  • For a firmer cookie, chill dough 15 minutes before baking. Fresh ripe peaches give the best flavor
  • if using frozen, thaw and pat dry.
