Ingredients
- 1 cup fresh peaches, diced
- 1 large egg
- 2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 cup brown sugar, packed
- 1 tsp ground cinnamon
- 3/4 cup granulated sugar
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1/2 cup butter, softened
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream butter, brown sugar, and granulated sugar until light and fluffy.
- Add egg and vanilla extract; mix well.
- Whisk flour, baking soda, cinnamon, and salt; gradually add to wet ingredients.
- Gently fold in diced peaches.
- Drop spoonfuls onto sheet, spacing apart.
- Bake 12‑15 minutes until edges are golden.
- Cool on sheet 3‑4 minutes then transfer to rack.
Notes
- For a firmer cookie, chill dough 15 minutes before baking. Fresh ripe peaches give the best flavor
- if using frozen, thaw and pat dry.
