  • 8 small flour tortillas
  • 2 cups fresh spinach, roughly chopped
  • 1 cup shredded mozzarella cheese
  • ½ cup crumbled feta cheese
  • ¼ cup thinly sliced red onion
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • Optional: chopped olives or sun-dried tomatoes

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add spinach and sauté for 1–2 minutes until wilted. Remove from heat.
  3. In a bowl, combine spinach, mozzarella, feta, red onion, garlic powder, and pepper.
  4. Place a tortilla in a clean skillet over medium heat.
  5. Spread filling evenly over half the tortilla.
  6. Fold tortilla in half and cook 2–3 minutes per side until golden and crispy.
  7. Repeat with remaining tortillas and filling.
  8. Slice into wedges and serve warm.
