Ingredients
- 8 small flour tortillas
- 2 cups fresh spinach, roughly chopped
- 1 cup shredded mozzarella cheese
- ½ cup crumbled feta cheese
- ¼ cup thinly sliced red onion
- 1 tablespoon olive oil
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
- Optional: chopped olives or sun-dried tomatoes
Instructions
- Heat olive oil in a skillet over medium heat.
- Add spinach and sauté for 1–2 minutes until wilted. Remove from heat.
- In a bowl, combine spinach, mozzarella, feta, red onion, garlic powder, and pepper.
- Place a tortilla in a clean skillet over medium heat.
- Spread filling evenly over half the tortilla.
- Fold tortilla in half and cook 2–3 minutes per side until golden and crispy.
- Repeat with remaining tortillas and filling.
- Slice into wedges and serve warm.
