Instructions

  3. In another bowl, cream butter and sugar until light and fluffy.
  4. Beat in egg and vanilla extract.
  5. Gradually mix dry ingredients into wet ingredients until dough forms.
  6. Divide dough into portions and tint each with pastel food coloring.
  7. Roll dough into small balls and place on baking sheets.
  8. Flatten slightly with the bottom of a glass.
  9. Bake for 8–10 minutes until set but not browned.
  10. Cool completely.
  11. Beat filling ingredients until smooth and fluffy.
  12. Pipe or spread frosting onto half the cookies and sandwich with remaining cookies.
