  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 1 cup chopped zucchini
  • 4 cups chicken broth
  • 1 lb chicken breast
  • 1 bay leaf
  • ½ tsp dried thyme
  • ½ tsp black pepper
  • Salt, to taste
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill or thyme (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery and sauté for 4–5 minutes until softened.
  2. Add garlic and cook for 30 seconds until fragrant.
  3. Pour in chicken broth and add bay leaf, thyme, pepper, and salt. Bring to a gentle simmer.
  4. Add chicken breasts to the pot, cover, and simmer for 12–15 minutes until cooked through.
  5. Remove chicken, shred or dice it, then return it to the pot.
  6. Add zucchini and simmer for 5 more minutes until tender.
  7. Remove bay leaf and stir in fresh parsley and dill or thyme.
  8. Taste and adjust seasoning as needed. Serve hot.

Notes

  • You can use boneless, skinless chicken thighs for richer flavor.
  • To keep it dairy-free, no dairy ingredients are used; simply proceed as written.
  • For a quicker finish, shred the chicken after the first 12–15 minutes and return to the pot with the zucchini.
