Ingredients

  • 1 low-carb tortilla
  • ¾ cup cooked chicken breast, shredded
  • 1 wedge Laughing Cow cheese
  • 2 tbsp plain Greek yogurt
  • 1 tbsp ranch seasoning or ranch dressing mix
  • ¼ cup shredded mozzarella or cheddar cheese
  • Cooking spray or a small amount of olive oil

Instructions

  1. In a bowl, mix shredded chicken, Laughing Cow cheese, Greek yogurt, and ranch seasoning until creamy.
  2. Heat a nonstick skillet over medium heat and lightly spray with cooking spray.
  3. Place tortilla in the skillet and spread chicken mixture evenly over half of the tortilla.
  4. Sprinkle shredded cheese on top of the filling.
  5. Fold tortilla over to form a quesadilla.
