- ¾ cup cooked chicken breast, shredded
- 1 wedge Laughing Cow cheese
- 2 tbsp plain Greek yogurt
- 1 tbsp ranch seasoning or ranch dressing mix
- ¼ cup shredded mozzarella or cheddar cheese
- Cooking spray or a small amount of olive oil
Instructions
- In a bowl, mix shredded chicken, Laughing Cow cheese, Greek yogurt, and ranch seasoning until creamy.
- Heat a nonstick skillet over medium heat and lightly spray with cooking spray.
- Place tortilla in the skillet and spread chicken mixture evenly over half of the tortilla.
- Sprinkle shredded cheese on top of the filling.
- Fold tortilla over to form a quesadilla.
- Cook for 2–3 minutes per side until golden brown and crispy.
- Remove from skillet, slice, and serve warm.
