Ingredients

  • 1 lb ground chicken
  • 1 tbsp sesame oil or olive oil
  • 3 cups shredded green cabbage
  • 1 cup shredded carrots
  • 3 cloves garlic, minced
  • 1 tsp fresh grated ginger
  • 2 tbsp gluten-free soy sauce or tamari
  • 1 tbsp rice vinegar
  • ½ tsp black pepper
  • Salt, to taste
  • 2 green onions, sliced
  • Optional: sesame seeds or chili flakes

Instructions

  1. Heat oil in a large skillet over medium heat.
  2. Add ground chicken and cook until browned, breaking it apart as it cooks.
  3. Stir in garlic and ginger and sauté for 30 seconds.
  4. Add shredded cabbage and carrots.
  5. Cook for 5–7 minutes until vegetables are tender but still slightly crisp.
  6. Stir in soy sauce, rice vinegar, pepper, and salt.
  7. Cook 2–3 more minutes, stirring well.
  8. Garnish with green onions and optional toppings.
  9. Serve warm in bowls.
