Easy Taco Soup is a quick, hearty Tex-Mex-inspired soup that’s perfect for weeknight dinners.

- 1 lb ground beef or ground turkey
- 1 small onion, chopped
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (15 oz) can diced tomatoes
- 1 (10 oz) can diced tomatoes with green chilies
- 1 packet taco seasoning
- 1½ cups beef or chicken broth
- Salt and pepper to taste
- Optional toppings:
- Shredded cheese
- Sour cream
- Avocado
- Tortilla strips
- Lime wedges
- Chopped cilantro
Instructions
- In a large pot over medium heat, brown the ground beef with the chopped onion until fully cooked. Drain any excess fat.
- Add in the taco seasoning and stir to combine.
- Pour in the black beans, corn, diced tomatoes, tomatoes with green chilies, and broth. Stir everything together.
- Bring to a boil, then reduce heat and simmer for 20–25 minutes to let the flavors meld.
- Taste and adjust salt and pepper as needed.
- Serve hot with your favorite toppings and enjoy the taco night twist!
Notes
- For a lighter version, use lean ground beef or turkey and drain fat.
- Store leftovers in the fridge up to 3 days or freeze for up to 3 months.
- Adjust heat with jalapeño or hot sauce if desired.
- Make it vegetarian by using extra beans and vegetable broth.
