Ingredients

- 4 cups grated zucchini
- 1 cup shredded cheese
- 1 cup turkey bacon, cooked and crumbled
- 1 cup breadcrumbs
- 3 eggs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt to taste
- Butter for greasing
Instructions
- 1. Preheat oven to 350°F (175°C) and grease a baking dish with butter.
- 2. In a large bowl combine grated zucchini, turkey bacon, shredded cheese, breadcrumbs, eggs, Parmesan, garlic powder, onion powder, and salt.
- 3. Mix until well combined.
- 4. Transfer mixture to greased dish and spread evenly.
- 5. Bake 30-35 minutes until golden and set.
- 6. Cool slightly before serving.
Notes
- For a spicier version, add crushed red pepper flakes. The casserole can be made ahead and frozen
- thaw before baking.
