- ¼ cup gluten-free soy sauce or tamari
- ½ tsp ground ginger
- ½ tsp black pepper
- Salt, to taste
- 2 large eggs, lightly beaten
- 2 green onions, sliced
Instructions
- Add diced chicken, rinsed rice, chicken broth, peas and carrots, corn, garlic, sesame oil, soy sauce, ginger, pepper, and salt to the crockpot.
- Stir gently to combine.
- Cover and cook on low for 4 hours or high for 2–2½ hours, until rice is tender and liquid is absorbed.
- Stir the mixture, then pour beaten eggs evenly over the rice.
- Cover and cook on high for an additional 15 minutes until eggs are set.
- Fluff rice with a fork and mix well.
- Taste and adjust seasoning as needed.
- Serve warm, topped with sliced green onions.

- For a thicker fried-rried texture, reduce the broth by ¼ cup.
