  • 4 cups chicken broth
  • 1 tsp Italian seasoning
  • 1 tsp dried basil
  • ½ tsp black pepper
  • Salt, to taste
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • Fresh basil or parsley, for garnish

Instructions

  1. Place chicken breasts in the bottom of the crock pot.
  2. Add olive oil, onion, garlic, crushed tomatoes, chicken broth, Italian seasoning, basil, pepper, and salt.
  3. Cover and cook on low for 6 hours or high for 3–4 hours, until chicken is tender.
  4. Remove chicken, shred it with two forks, then return it to the crock pot.
  5. Stir in heavy cream, Parmesan cheese, and mozzarella cheese.
  6. Cover and cook on low for an additional 10 minutes, until creamy and melted.
  7. Taste and adjust seasoning as needed.
  8. Serve hot, garnished with fresh basil or parsley.
