Ingredients
- 1 ½ lbs boneless skinless chicken breasts

- 1 tsp dried basil
- ½ tsp black pepper
- Salt, to taste
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- ½ cup shredded mozzarella cheese
- Fresh basil or parsley, for garnish
Instructions
- Place chicken breasts in the bottom of the crock pot.
- Add olive oil, onion, garlic, crushed tomatoes, chicken broth, Italian seasoning, basil, pepper, and salt.
- Cover and cook on low for 6 hours or high for 3–4 hours, until chicken is tender.
- Remove chicken, shred it with two forks, then return it to the crock pot.
- Stir in heavy cream, Parmesan cheese, and mozzarella cheese.
- Cover and cook on low for an additional 10 minutes, until creamy and melted.
- Taste and adjust seasoning as needed.
- Serve hot, garnished with fresh basil or parsley.
