  • 3 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • ½ tsp ground cumin
  • ½ tsp black pepper
  • Salt, to taste
  • 1 cup shredded cheddar cheese (optional)
  • Fresh parsley or green onions, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned. Drain excess fat.
  2. Add onion and cook for 3–4 minutes until softened. Stir in garlic and cook for 30 seconds.
  3. Add diced potatoes, black beans, corn, diced tomatoes, and beef broth.
  4. Season with smoked paprika, chili powder, cumin, pepper, and salt.
  5. Bring to a boil, then reduce heat and simmer for 20–25 minutes until potatoes are tender.
  6. Stir in heavy cream and shredded cheddar cheese, if using, until melted and creamy.
  7. Simmer for 5 more minutes, stirring occasionally.
  8. Taste and adjust seasoning as needed.
  9. Serve hot, garnished with parsley or green onions.

Notes

  • Optional cheddar cheese can be stirred in at the end for extra richness.
  • For a lighter version, use half-and-half or milk instead of heavy cream.
