- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 medium potatoes, peeled and diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 1 cup heavy cream
- 1 tsp smoked paprika
- 1 tsp chili powder
- ½ tsp ground cumin
- ½ tsp black pepper
- Salt, to taste
- 1 cup shredded cheddar cheese (optional)
- Fresh parsley or green onions, for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned. Drain excess fat.
- Add onion and cook for 3–4 minutes until softened. Stir in garlic and cook for 30 seconds.
- Add diced potatoes, black beans, corn, diced tomatoes, and beef broth.
- Season with smoked paprika, chili powder, cumin, pepper, and salt.
- Bring to a boil, then reduce heat and simmer for 20–25 minutes until potatoes are tender.
- Stir in heavy cream and shredded cheddar cheese, if using, until melted and creamy.
- Simmer for 5 more minutes, stirring occasionally.
- Taste and adjust seasoning as needed.
- Serve hot, garnished with parsley or green onions.

- Optional cheddar cheese can be stirred in at the end for extra richness.
- For a lighter version, use half-and-half or milk instead of heavy cream.
- Leftovers refrigerate well for 3-4 days; reheat gently.
