- 4 cups cauliflower rice
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup plain Greek yogurt
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup chicken broth
- 1 tsp Italian seasoning
- 1/2 tsp black pepper
- Salt, to taste
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add onion and cook 3–4 minutes.
- Stir in garlic and cook 30 seconds.
- Add cauliflower rice and sauté 4–5 minutes until slightly tender.
- In a large bowl, mix shredded chicken, sautéed cauliflower mixture, Greek yogurt, chicken broth, Italian seasoning, salt, and pepper.
- Fold in half of the mozzarella and Parmesan.
- Transfer mixture to a greased baking dish and spread evenly.
- Top with remaining mozzarella and Parmesan.
- Bake 25–30 minutes until hot and bubbly.
- Let rest 5 minutes before serving.
