  • 4 cups cauliflower rice
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup plain Greek yogurt
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1 tsp Italian seasoning
  • 1/2 tsp black pepper
  • Salt, to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add onion and cook 3–4 minutes.
  3. Stir in garlic and cook 30 seconds.
  4. Add cauliflower rice and sauté 4–5 minutes until slightly tender.
  5. In a large bowl, mix shredded chicken, sautéed cauliflower mixture, Greek yogurt, chicken broth, Italian seasoning, salt, and pepper.
  6. Fold in half of the mozzarella and Parmesan.
  7. Transfer mixture to a greased baking dish and spread evenly.
  8. Top with remaining mozzarella and Parmesan.
  9. Bake 25–30 minutes until hot and bubbly.
  10. Let rest 5 minutes before serving.
