Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, beat eggs, brown sugar, granulated sugar, oil, and vanilla until smooth.
- Stir dry ingredients into wet ingredients, then fold in grated carrots.
- Pour batter evenly into prepared pan.
- In a separate bowl, beat cream cheese and sugar until smooth.
- Add egg and vanilla and mix until creamy.
- Spread cream cheese mixture gently over the carrot cake batter.
- Bake for 40–45 minutes until set in the center.
- Cool completely, then refrigerate for at least 2 hours before slicing.
