  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat eggs, brown sugar, granulated sugar, oil, and vanilla until smooth.
  4. Stir dry ingredients into wet ingredients, then fold in grated carrots.
  5. Pour batter evenly into prepared pan.
  6. In a separate bowl, beat cream cheese and sugar until smooth.
  7. Add egg and vanilla and mix until creamy.
  8. Spread cream cheese mixture gently over the carrot cake batter.
  9. Bake for 40–45 minutes until set in the center.
  10. Cool completely, then refrigerate for at least 2 hours before slicing.
