Instructions
- In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large bowl, cream softened butter with granulated sugar and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add dry ingredients to the wet, mixing until a soft dough forms.
- On a lightly floured surface, roll out the dough into a rectangle (~¼ inch thick).
- Brush melted butter over the dough, then sprinkle with brown sugar and cinnamon.
- Roll the dough tightly into a log, wrap in plastic wrap, and chill for at least 1 hour.
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Slice chilled dough into ½-inch cookies and place on the baking sheet.
- Bake for 10–12 minutes, or until edges are lightly golden. Let cool completely.
- Mix glaze ingredients and drizzle over cooled cookies.
