Instructions

- Blend cottage cheese, eggs, maple syrup, and vanilla until smooth.
- In a bowl, whisk oat flour, baking powder, baking soda, and salt.
- Stir wet ingredients into dry ingredients until combined.
- Pour half the batter into the pan.
- Mix brown sugar and cinnamon, then sprinkle half over batter.
- Add remaining batter and top with remaining cinnamon mixture.
- Use a knife to gently swirl.
- Bake 40–45 minutes until set and golden.
- Cool completely before slicing. Drizzle glaze if desired.
