  • 8 whole wheat or high-protein tortillas
  • 1 cup plain Greek yogurt
  • 1 cup low-fat sour cream
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups chicken broth
  • 1 can (4 oz) diced green chilies
  • 1½ cups shredded mozzarella or Monterey Jack cheese
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp black pepper
  • Salt, to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Fill each tortilla with shredded chicken and a sprinkle of cheese. Roll and place seam-side down in a greased baking dish.
  3. In a saucepan, melt butter over medium heat.
  4. Whisk in flour and cook 1 minute.
  5. Slowly whisk in chicken broth until thickened.
  6. Remove from heat and stir in Greek yogurt, sour cream, green chilies, garlic powder, salt, and pepper.
  7. Pour white sauce evenly over enchiladas.
  8. Top with remaining cheese.
  9. Bake 25–30 minutes until bubbly and lightly golden.
  10. Let rest 5 minutes before serving.
