- 8 whole wheat or high-protein tortillas
- 1 cup plain Greek yogurt
- 1 cup low-fat sour cream
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups chicken broth
- 1 can (4 oz) diced green chilies
- 1½ cups shredded mozzarella or Monterey Jack cheese
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp black pepper
- Salt, to taste
Instructions
- Preheat oven to 375°F (190°C).
- Fill each tortilla with shredded chicken and a sprinkle of cheese. Roll and place seam-side down in a greased baking dish.
- In a saucepan, melt butter over medium heat.
- Whisk in flour and cook 1 minute.
- Slowly whisk in chicken broth until thickened.
- Remove from heat and stir in Greek yogurt, sour cream, green chilies, garlic powder, salt, and pepper.
- Pour white sauce evenly over enchiladas.
- Top with remaining cheese.
- Bake 25–30 minutes until bubbly and lightly golden.
- Let rest 5 minutes before serving.
