  • 2 cups chicken broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 tsp paprika
  • 1 tsp cumin

  • Salt, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Cook sausage 4–5 minutes until browned. Remove and set aside.
  3. In the same pot, sauté onion and bell pepper 3–4 minutes.
  4. Stir in garlic and cook 30 seconds.
  5. Add rice, paprika, cumin, chili powder, salt, and pepper; stir to coat.
  6. Pour in chicken broth and bring to a boil.
  7. Reduce heat, cover, and simmer 15–18 minutes until rice is tender.
  8. Stir in black beans and cooked sausage; heat 3–5 minutes until warmed through.
  9. Fluff with a fork, garnish if desired, and serve.
