  • 1 tbsp olive oil

  • 1 cup pearl barley, rinsed
  • 8 cups beef broth
  • 1 tbsp tomato paste

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat. Add beef cubes and brown on all sides. Remove and set aside.
  2. In the same pot, add onion, carrots, and celery. Cook for 4–5 minutes, stirring often, until softened.
  3. Add minced garlic and tomato paste, cooking for another minute until fragrant.
  4. Return the browned beef to the pot. Stir in barley, beef broth, bay leaf, thyme, pepper, and salt.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 1 1/2 to 2 hours, stirring occasionally, until beef and barley are tender.
  6. Remove the bay leaf and adjust seasoning if needed.
  7. Ladle soup into bowls and garnish with chopped parsley before serving.
