  • 1 lb steak tips or sirloin, cut into bite-size pieces
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup baby potatoes, halved
  • 2 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • 1 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp black pepper
  • Salt, to taste

Instructions

  1. Preheat oven to 425°F (220°C). Line a sheet pan with parchment paper.
  2. In a bowl, whisk balsamic vinegar, honey, garlic, olive oil, Italian seasoning, salt, and pepper.
  3. Add steak tips and toss to coat.
  4. Place broccoli, bell pepper, zucchini, and potatoes on the sheet pan.
  5. Drizzle vegetables with a little olive oil and season lightly with salt and pepper.
  6. Spread steak tips among the vegetables in a single layer.
  7. Roast 20–25 minutes until vegetables are tender and steak is cooked to desired doneness.
  8. Toss everything gently and serve warm.
