  • 1 (15 oz) can pinto beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (15 oz) can diced tomatoes
  • 1 (12.5 oz) can cooked chicken breast, drained and shredded
  • 1 (10 oz) can enchilada sauce (mild or medium)
  • 1 packet taco seasoning
  • Optional toppings: shredded cheese, sour cream, tortilla chips, avocado, cilantro, lime wedges

Instructions

  1. In a large pot, combine all 7 cans (do not drain tomatoes or enchilada sauce) and taco seasoning. Stir well.
  2. Heat over medium-high heat until the soup comes to a gentle boil.
